Creamy potato salad flavored with dijon mustard and pickled chopped cucumber is super tasty. Pick up some leftover vegetables from the fridge and serve with the potato salad and maybe some grilled chicken as well. Top with homemade croutons and preferably roasted onions or some nuts and seeds.

- 4 cold boiled potatoes (about 100 g each)
- 1 1/2 dl sour cream
- 1/2 cup mayonnaise
- 1 - 2 tsp dijon mustard
- 1/2 dl pickled chopped cucumber (Boston cucumber)

- grilled chicken or roast beef
- croutons
- vegetables (e.g. peppers, carrots, tomato)
