This artichoke cream is something out of the ordinary. Cannellini beans provide the creaminess - artichoke, garlic and parsley provide the flavorings. The perfect accompaniment to this hearty grits salad, consisting of green beans, snack peppers, olives and grits. Serve with oven-baked garlic baguettes.
Ingredients
Pull out and measure what you need before you start cooking.
- 2 garlic baguettes (each 175 g)
- 4 port bulgur or other semolina
- 1 pack of cooked cannellini beans (380 g each)
- 130 g artichoke cream
- 1 clove of garlic
- 1/2 dl water
- 1/2 pack fresh parsley (each 20 g)
- salt
- pepper
- 150 g haricots verts (beans)
- 150 g snack peppers
- 2 tbsp olive oil
- 1 pack of olives preferably Greek mix (300 g each)
- 65 mâche salad

Method

Rinse the beans in cold water and drain in a sieve.

Mix beans and artichoke cream with pressed garlic, water and parsley into a cream.

Season to taste with salt and pepper.

Trim the haricots verts and cut the peppers into pieces.

Fry the beans and peppers in the olive oil in a frying pan for 3-4 minutes and season with salt and pepper.

Mix the semolina with the vegetable grinder and the olives.

Serve with bread and salad.
