These mini burgers that you fill with crispy fried cod fillet are perfect as a side dish or appetizer. The smooth ricotta cream flavored with dill goes perfectly with the fish. Finally, the fish burgers are topped with some peppery arugula.
Ingredients

- 1 1/2 - 2 pots of dill
- 2 dl ricotta cheese
- salt
- pepper
- 900 g cod fillet or pollock fillet
- 2 eggs
- 2 dl breadcrumbs (preferably panko)
- 2 tbsp oil
- 10 slider bread (mini hamburger bread)
- 2 packs of arugula (65 g each)
- lemon wedges

Thaw the fish.

Finely chop the dill and mix with the ricotta.

Season to taste with salt and pepper.

Cut the fish into approx. 4 cm pieces.

Season with salt and pepper.

Beat eggs in a deep plate and pour breadcrumbs onto another plate.

Dip the fish first in the egg and then in the breadcrumbs.

Fry the fish in the oil in a frying pan for 2-3 minutes on each side.

To serve: Heat the bread and distribute the fish, ricotta and arugula in the bread.
