If you haven't caught on to the frame, learn to do so now. This veggie version has a base of chilli, onion, garlic, soy and vegetable broth. You let the ramen noodles cook in the broth before adding green onions, green peas, tofu and bean sprouts. Finish with egg halves on top. Smarr!
Ingredients

- 4 eggs
- 1 red pepper (chili)
- 1 yellow onion
- 2 tbsp olive oil
- 2 cloves of garlic
- 2 tbsp sesame seeds
- 2 tbsp Japanese soy
- 2 l vegetable broth (water and cubes or stock)
- 4 port ramen noodles
- 1/2 pack green onions (each 125 g)
- 150 g green peas
- 230 g natural tofu
- 180 g fresh bean sprouts
- salt
- pepper

Boil water in a saucepan.

Add the eggs and let them boil for 8 minutes.

Rinse the eggs cold.

Core out and finely chop the chili.

Peel and slice the onion.

Fry the onion and chili in the olive oil in a pot.

Press in the garlic and stir in the sesame seeds.

Pour in the soy and broth and let simmer for about 5 minutes.

Cook the noodles in the broth, according to the time instructions on the package.

Trim and slice the green onions and shred the green peas.

Dice the tofu.

Turn the onion, peas and tofu into the pot together with the sprouts.

Let it get hot.

Season to taste with salt and pepper.

Peel and split the eggs.

Serve the ramen in bowls with the eggs on top.
